Super Bowl on the Whole30

img_20170205_193458When most people start a “diet”, food program, or some sort of “cleanse”, we generally start on a Monday: after the weekend, right?  I mean, who wants to start eating right on a Friday?! What a waste of a perfectly good food-indulging weekend! We all want one last food “hurrah” before the “transformation” begins, and then come Monday, we start getting organized/in shape/eat right/whatever.  If you’re doing a longer food regimen like the Whole30, or something that you plan to carry over into some lasting habits–no matter when you start–you’ll hit a weekend and that’s where the test really begins.  Sure, it’s not so hard to get through the weekdays in a new routine.  Maybe you go to bed early to avoid late-night snacking. You have light meals and distract yourself from more daytime snacking by occupying yourself with work.  This doesn’t seem so hard!  And then the weekend comes.  Maybe you had plans to go out, enjoy company with friends, or just want to veg on the couch with the hubby and order take-out, eat ice cream, and have a glass of wine (or margarita)!  But all of that is dampened by food restrictions.  (This is one reason I’m not a fan of dieting for the sake of dieting, or long-term food-deprivation.  We live in such a food-centered society, it’s hard to really enjoy ourselves in social situations without food.  Good food.)  For me, food I love is a huge part of my enjoyment of life.  My Whole30 is not about weight-loss, or because of “issues” with any kind of food.  For me, it’s been an experiment and a hopeful minor lifestyle change.  I’ve wanted to see if my energy levels would change with a diet change (they have) and I hope to incorporate healthier lunches and snacks and be able to keep my everyday diet a priority in my life.  (It can be too easy to snack on processed foods or to take bites of my kids’ lunches rather than make myself a salad.  And don’t even get me started on my old “late-night snacking” habits!)

Anyway, I got through my first 2 weekends pain-free.  Of course, I wished I could indulge in some take-out or dessert with Randy on the couch while watching a movie or playing a game (I went with a few handfuls of almonds, instead), but all-in-all, they were good weekends.  When I planned for the Whole30, I had no plans on the weekends, but that quickly changed.  I learned to use restraint but be polite (which was hard on the first weekend when the homemade oreo ice cream came out!), and to pack my own snacks and be creative with what I could eat!  This has been a fun adventure.

img_20170205_193300Come Super Bowl Sunday, I knew I would need to be equipped with some awesome appetizer recipes so I could still enjoy the event.  (Events of the actual mind-blowing game aside, this is about food.) 😉  Here are some of my “healthy” Whole30 compliant recipes that were enjoyed by all on game night!  You can use them for your next gathering whether you’re on the Whole30 or not, because they’re delicious.  Trust me! 😉

Homemade Salsa & Guacamole

My recipes for homemade salsa and guacamole are naturally Whole30 compliant.  That’s what made them so perfect.  Actually, I do typically add a pinch of sugar to the salsa to cut through the bitterness of the tomatoes, but I just skipped that this time.  My trick when I’m making these two dips together is to use the food processor for the salsa first, then without cleaning it out, I start the guacamole right away in the same processor.  That way, the guacamole gets a hint of the salsa flavors in it.  So yummy!

Salsa (Measurements can be to your taste, depending on how strong you want your flavors)

  • 1/2 (or whole) onion, quartered

    Let’s talk about the chips!  No tortilla chips on the Whole30!  Technically, chips of any kind go against the philosophy of eating whole foods, foods with minimal ingredients.  But because these veggie chips (left) didn’t have any actual out-of-bounds ingredients, I made an exception.  Because, Super Bowl. PSA: One Potato Two Potato makes an excellent sweet potato chip!  I’ve only seen them at Starbucks so far.
  • 1-2 cloves of garlic, roughly chopped
  • 1/2 (or whole) jalapeño, roughly chopped
  • handful of cilantro
  • 28 oz can whole, peeled tomatoes
  • 4.5 oz can chopped green chiles
  • 1 tsp cumin
  • 1-2 tsp salt
  • 1-2 tsp hot sauce

Place all ingredients in food processor and pulse until desired smoothness.  Test with a tortilla chip before pouring into a bowl!  You never know if you’ll have to adjust something.

Guacamole

  • 4-5 avocados, ripened
  • 1/4-1/2 onion, roughly chopped
  • 1-2 cloves garlic
  • 1/2 (or whole) jalapeño, roughly chopped
  • handful of cilantro
  • 1 tsp cumin
  • 2 tsps salt
  • juice of 1 lime

Place all ingredients in food processor and pulse until desired smoothness.

Stuffed Jalapeños

img_20170205_193354Normally when I stuff jalapeños, it’s with cream cheese.  That’s obviously a Whole30 no-no, so I came up with this little concoction instead.  To make the turkey sausage, I followed this Whole30 recipe (click the link below), which I love for breakfast sausage with my scrambled eggs.  So bonus, I only used part of the sausage in my jalapeño stuffing, and I was able to save the rest for some breakfasts this week!  

  • 10 jalapeños, cut in half lengthwise, seeds removed (use gloves!)
  • 2 sweet potatoes, cooked and mashed with salt, pepper, and ghee (clarified butter, whole30 approved)
  • crumbled turkey sausage
  • 10 strips Whole30 compliant bacon, cut in half

Combine the mashed sweet potatoes and the sausage.  Spread the mixture into each jalapeño half.  Wrap in a half strip of bacon and place on a rack, on top of a baking sheet.  Bake at 275* for 2 hours.  Serve hot.

I found these other 2 recipes, as well, which were a huge hit with me and our guests.

Recalculating…

There is a lot of adapting involved in parenting.  Before you become a parent, you probably have an idea of what kind of parent you’ll be like and how your kids will behave.  Then you start having kids and… well, it usually doesn’t look exactly how you pictured it.  Things arise that you never could’ve predicted and so you adapt.  You try one discipline technique and it doesn’t work, so you adapt.  Methods that your oldest child responded well to don’t have nearly the same effect on your second child, so you adapt.  If you’re a parent who has never had to reevaluate or change direction with something, you’re probably not doing something right.  Or you’re just not receptive to what’s not working.  Or you’re the perfect parent.  But I’m convinced that doesn’t exist, so… 😉

This same thinking is applied for teachers in the classroom.  When something isn’t “clicking” for a student, the (good) teacher will try to find another method that will make the material accessible and easily understood.

As a homeschool mom, there’s a combination of both these mentalities that can sometimes be overwhelming.  When we have a bad day of school, we wonder if we need to change our parenting style or our teaching style.  As daunting as it can be, it’s important to keep assessing so we can meet our goals.  I don’t know anyone who made the decision to homeschool on a whim.  Usually it comes with lots of thought, research, discussion, and for the Christian families, prayer.  With something so important at stake, of course we want to do our best.

Recently I was met with a decision that made me turn and look at the way I’m “teaching” my preschooler, Noah, and if I’m really tailoring my teaching style and preschool activities to his needs right now.  (He’s a little behind in his speech, so that’s something I want to work on with him.  Now, when I say “teaching”, I do mean very light, fun activities.  One thing that I love about homeschool is that kids can still have plenty of time to be kids.)  After a lot of prayer and discussion with my husband and close homeschool mom friends, I decided I needed to remember why we decided to homeschool in the first place, stay the course, but just recalculate a bit and change what I do with him right now.  I’ve had to do this with Abby in the past and I strongly suspect I’ll continue to do it year after year with all my kids.  When you come face to face with a time for recalculating your parenting or your teaching style with your kids, here are some important things to remember:

  1. Cover the situation in prayer.  Cover your child in prayer and ask for wisdom to know what to do.
  2. Remember WHY you’re on the path that you’re on.  My husband and I have specific goals for our family and our children which is why we decided to homeschool for now.  I think it’s important to have “umbrella goals” or a family mission statement that won’t change over time.  But you may have smaller, more specific goals that will change as your kids grow up.  For us, homeschooling may not always be tied to our umbrella goals, but right now it’s a big part of how we’re meeting those goals and it’s definitely tied to our smaller goals for our young kids.  It may be helpful to have these goals written down somewhere.
  3. Realize that change takes time.  So you tried something once and it didn’t work out the way you envisioned.  It doesn’t mean you have to change it right away, your child may just need an adjustment period.  But if you keep doing the same thing without desired results, then it might be time to reassess.
  4. Recalculating doesn’t make you a failure!  It makes you a better parent/teacher for recognizing the need for change and following through!
  5. Age matters.  Maturity matters.  Sometimes, my best plan of action was none at all.  Simply because my child was too young or immature to “get it” at that time.  So, we just took a break.  After a month or two of not doing a certain activity, what used to be met with tears and anxiety was suddenly met with confidence and determination upon reintroduction.  And I never even had to change my teaching method!  She just needed a little time to grow and mature.
  6. The best route is not always the fastest route, and it’s definitely not the same for everyone!  Stop comparing every little detail of your situation to another’s.  Sure, there are basic, age appropriate benchmarks to be aware of, but not every kid moves at the same pace.  And the beauty of homeschooling is that you can tailor your child’s education so that it suits their needs, and they don’t always feel like they have to learn like everyone else (by “keeping up” in the classroom).

As we are about half way through the school year (depending on what kind of schedule you follow), now is a good time to reassess where you are in your homeschool year.  Is your child understanding everything?  Are you on target, or where you wanted to be by this time of year?  If not, what needs to change?  Sometimes it’s our expectations that need to change, but other times, we do need to recalculate so we can still make it to our destination even if we have to go about it a different way.

New Adventures in Food and Homeschool

It’s been a week since I started my second round of the Whole30 and to be honest, it’s been great this time around.  Last time, I remember thinking, “It’s only 30 days, I can get by on mostly salad for that amount of time.”  That’s part of what contributed to me having a hard time with it.  Trying to get by on salad and smoothies for days on end (salads that can only be dressed with oil and vinegar, by the way, since your favorite dressing from the store actually contains sugar) is not ideal, especially for someone who’s used to eating a wide variety of flavorful foods!  So this time, not only have I been researching and making more unique and delicious dinners, I’ve been getting creative with breakfasts and even finding snack foods that are Whole30 compliant.  It’s a lot of work!  But it’s been fun, and worth it.  I’m totally in love with these mocha energy balls I made over the weekend and I already made a second batch to get me through this week!  I was also struck yesterday as I did my grocery shopping (once in a while it’s nice to actually go to the store and shop rather than use the to-go services, especially if I only have one child with me–that was a treat!) at just how many aisles and sections of the store I skipped because I’m on the Whole30 and only buying whole foods (mostly–I still have 4 other people in the house to feed, and they still like their dairy and grains).  It wasn’t the first time I thought about what’s in our food at the grocery store, but it definitely made me think about it more.

In homeschool news, I introduced new centers this week (as I plan to every Friday).  This week we were in tight quarters as we’re in the process of swapping out our living room entertainment center, but we made do.  So far, the kids LOVE these as a general idea.  They look forward to “center day” and it really has worked at keeping them occupied during regular school hours when I need one-on-one time with one of them.  I’ve started keeping a log of my ideas and it helps to plan ahead.  I think I have the next few weeks planned now, but I still have to do the prep work, which can be time consuming.  So glad I finally have a new laminator ($20 on amazon, thank you very much)!  It helps to know that the work I’m doing now can be used for siblings in the future by keeping it laminated and protected!  If you’re interested in this week’s centers, take a look:

The Last Supper

So how has everyone’s 2017 started off?  (Happy New Year, by the way!)

The year has been off to a rocky start for me (us), but that means it can only improve from here, right?  I think so. 😉  But the purpose of this post isn’t to talk about the bad stuff.  There’s some good and fun things going on, too!  So here they are, in no particular order, my random positive thoughts/things of January 2017:

  1. I think I’ve discovered a new and helpful way to homeschool Abby and Noah and to give them each individual attention.  We now do “centers” and they each have a choice of 3 they can do independently when I work with the other one.  They’ll get new centers every Friday and get the morning to practice all of them.  Then the next week, if I’m working with Abby, Noah goes to do whichever center he wants, and vice versa. So far it’s worked wonderfully and they love them!  It will be a lot of work in the beginning, for me to plan and prepare it all, but I think it’ll be worth it!  Homeschool moms, what are some things you do to help your kids young kids work independently?  I love new ideas!
  2. I can’t decide if I’m pro online clothing shopping or not.  I got a bunch of gift cards for Christmas and was going to go shopping one Saturday, but a mini-blizzard came through.  I’ve really been needing some new winter clothes to wear.  After having 3 kids, it got to the point where I actually like my maternity clothes better than my regular clothes, which hardly ever seem to fit right anymore anyway!  So I ordered a bunch of clothes online recently and when they came, I wasn’t as happy with them as I thought I’d be.  I mean, I’m still pleased, but some items just weren’t how I pictured them in person.  But I’m not ready to give up on online clothing shopping totally.  I mean, you just can’t beat the convenience factor!  How many people out there buy clothes online???
  3. I had a much needed trip to Michael’s today and now am feeling super crafty.  I’ve had my sewing machine sitting in our living room for about a week now because I desperately need to fix 2 pairs of pants and a shirt.  But when I finally sat down to do it, I was out of thread.  (Of course! Can you tell I use it often?!  haha!)  I also needed more yarn for a blanket I want to start, and while I was there, I decided to make a winter wreath for the kitchen door.  So now my living room is even more cluttered with craft items.  Think I can get it cleared out by February?  That’ll be the goal.
  4. Tomorrow I restart the Whole30.  Ever done it/heard of it?  No grains, no dairy, no sugar… yep.  I tried it once before but I didn’t get through the 30 days–ahem, there were extenuating circumstances.  The process intrigues me.  And as a mom, particularly a homeschool mom, I am constantly thinking about my example to my children throughout the day.  I don’t want my energy always lagging and I even though I’m okay with them knowing how much I love coffee and chocolate, I also want them to know that it’s important to take care of your body.  I don’t like the word diet, and that’s not the example I want to set.  This is more about learning how my body reacts to different foods and filling with only whole foods for 30 days.  Wish me luck!  As my “last supper” before it starts, tonight I made stuffed chicken, butternut squash risotto, and balsamic broccoli.  I know what you’re thinking, my last meal should’ve been pizza.  The thought crossed my mind… while I was already cooking.  haha!  Oh well.  It’s probably been a week since I’ve had pizza, so at the end of this, a pizza will be even more gratifying. 😉

img_1144Making stuffed chicken is pretty easy, very versatile, and really elevates a basic chicken dish!  You can either use split chicken breasts (skin on) and stuff your chicken between the skin and flesh, or you can pound out a skinless breast and place your “stuffing” on top, then roll the chicken up, secure with toothpicks, and then grill/bake, whichever you choose.  If you opt for this technique, you can also get a little “wild” and bread the chicken for extra flavor and crunch!  I’ve done it a few times, but tonight I didn’t have time.

img_1150I pounded out my chicken, seasoned it with salt and pepper, then layered spinach, basil, roasted red peppers, and goat cheese on top.  Then I rolled the chicken up, re-seasoned the outside with salt and pepper, then seared it in a hot cast iron skillet and finished it off in a 400* oven for about 15 minutes.  Delicious!!!

I love making this broccoli, too, because my children ask for seconds and thirds!  I simply boil the broccoli in salted water, being careful not to overcook it.  I whisk together minced garlic, dijon mustard, balsamic vinegar, and extra virgin olive oil.  Then the added the cooked, drained broccoli to this mixture, season with pepper and fresh lemon juice. So yummy.

Of course, I couldn’t skip dessert on my last night before the Whole30, so I made Ree Drummond’s “Knock You Naked Brownies.”  Yes.  So much yes.  So much love.  These are amazing.  I’m excited for this round of Whole30 because thanks to my awesome sister-in-law, I’m equipped some with hearty recipes and extra tools to get me through.  I’ll keep you posted. 😉  Goodnight, all, and cheers to a better year! Comfort Food

After my last post, I figured it might be good to follow up with something comforting.  And what’s more comforting than a favorite meal or food?  Every fall/winter I seem to find a different rendition of a chicken stew or something similar that becomes my obsession for the season.  They’re all so similar that even if I decided to make two different recipes in a short time period, it wouldn’t really seem like I was changing things up at all.  They all have your basics: poultry, onions, carrots, celery, some kind of thick, creamy broth, and a biscuit or pastry.  Everything that just screams comfort!

One year my obsession was Bobby Flay’s turkey pot pie with sage crust.  It’s your basic pot pie but the sage in the crust combined with the turkey breast really elevates it.  I used to easily be able to make two at once and freeze the second for another night (sometimes that same week)!  I’ve had years of experimentation with different chicken noodle soup recipes, and Ina Garten’s chicken stew with biscuits on top is super scrumptious.

This year I’m extremely into Ree Drummond’s chicken and dumplings.  It’s only December and I can’t even tell you how many times I’ve made it since October.  I love how the dumplings puff up as soon as they enter the simmering broth.  There’s nothing like a hot bowl of this stew to warm you right up on a cold night!  Randy says it’s his favorite, but I called him out the other night on saying that almost every night at dinner, so he obviously can’t be trusted. 😉

How comforting does this bowl look?!  This was a night Randy came home late from work and we took our bowls into the living room and enjoyed dinner for 2 by the light of the Christmas tree.  (There are some perks to his working late…) 😉

Another comforting recipe I have is my pepparkakor cookies, which essentially are Swedish gingerbread cookies.  The word “pepparkakor” literally means pepper cake.  There’s a Swedish “legend” that goes with the cookies, too.  Think of a secret wish and hold the pepparkakor in your hand.  With your opposing finger, press down in the center of the cookie.  If it breaks into 3 pieces exactly, your wish will come true!  I used to do this with my Morfar (Swedish for mother’s father) all the time as a little girl.  Unfortunately, my cookies always come out a little too thick to break them easily with a single finger, but they taste delicious!  I must say that my favorite part of these cookies is the way the house smells when I make them.  It’s spicy, sweet, and warm, and reminds me of my grandparents.  If you like gingerbread but don’t care for the time it takes to ice them into little people, give this recipe a try!  We don’t have time to make gingerbread cookies before Christmas this year like I planned, but we may still make them after.  Until then, I have a whole tin of pepparkakors that we will enjoy! 🙂  Here’s the recipe, the printable is at the bottom…

Ingredients

Here is a plate of my pepparkakors with a Vietnamese cardamom latte!  Yes, those are orange peels in my coffee carafe.  The latte is delicious!  Part of the Ninja recipe book.
  •     2/3 cup packed brown sugar
  •     2/3 cup molasses
  •     1 teaspoon ground ginger
  •     1 teaspoon ground cinnamon
  •     1/2 teaspoon ground cloves
  •     3/4 tablespoon baking soda
  •     2/3 cup butter
  •     1 egg
  •     3 1/2 cups sifted flour
  1. Place butter in a large, heatproof bowl. In a medium saucepan, heat brown sugar, molasses and spices just to boiling point. Add baking soda and stir in. Pour this mixture over the butter and stir until it melts.
  2. Beat egg and mix in; add flour, a cup at a time, and blend thoroughly. Turn out onto a lightly floured board and knead 1-2 minutes. Wrap in waxed paper and chill until firm (about an hour).
  3. Preheat oven to 325 degrees F.
  4. Roll out to approximately 1/8 inch thickness on a lightly floured board and cut into desired shapes. Place on greased baking sheets and bake for 8 – 10 minutes.
  5. Remove from sheets and cool on racks.

When You Feel Like a Failure…

It’s. Been. A. Week.  Anyone else?  Seriously.  The things that happened at the beginning of the week, like the snow and shoveling my driveway on Monday, or the MomHeart Group I went to on Tuesday evening seem like they were weeks ago.

Noah was sick last weekend and I ended up bringing him to the doctor on Tuesday. Bacterial infection. Amoxicillin. If you have (or had) small children, you know the drill.  He’s much better now, but the girls are sick.  And I have a horrible cough.  The week has had some ups and downs, a lot of downs.  But probably the biggest downer of all, is this feeling of failure in every department of my life that I’ve let linger all week.  Why do we do this to ourselves?  I know a lot of other moms go through this.  So I’m opening up about my own feelings of weakness.

I guess it started on Monday.  The snow plus Noah being sick meant a sick/snow day to start the week.  I feel like I see occasional Facebook posts of other moms with their sick kids having a snuggly movie day under a blanket with some tea or hot cocoa.  It looks so lovely and serene!  (And of course, it’s only a picture, and we all know a 2-second photo that gets posted on Facebook is not necessarily the reality of an entire day, but it seems like it, sometimes, doesn’t it?)  So I was hoping to have such a day with my kids.  But I can only sit down and snuggle with my sick children after I’ve…

  • disinfected the entire house
  • changed bed sheets
  • started laundry
  • cleaned the kitchen and bathroom
  • cleaned out all the humidifiers because oh my goodness did you see the GMA special on how much bacteria can grow in humidifiers if they aren’t properly cleaned regularly?!  Yuck!
  • bleached the window sills to get rid of any black mildew or mold… or is that just dirty dust that’s worked its way into the corners of the windows from every other time I clean the windows and sills?  Doesn’t matter, bleach it!
  • and on this day in particular, shoveled the driveway

So by the time I was actually able to sit down and try to get some snuggle time in, Abby, who wasn’t sick at the time, couldn’t sit still and watch another movie if you paid her, and Noah was falling asleep.  So the day came and went without that perfect Kodak moment.  Initiate feeling of failure.  (And to clarify, it’s not just about getting the cute pic on Facebook.  It’s about not getting that time, that moment.  Don’t sick kids need mommy snuggles???  Am I a bad mother because I spent the day cleaning the house instead of hugging my kids???  Not that I don’t hug them all the time anyways, but, these were my thoughts.) Here’s what my house typically looks like with sick children…

My kids have been sick with colds recently so this new wave of sickness felt familiar.  Which led to a whole new set of questions leading to my feeling of failure…

  • why are my kids “always” (yes, huge exaggeration but this is how it felt) sick?!
  • I haven’t refilled their vitamins in a while, is that the reason?
  • Am I not feeding them enough fruits and vegetables?
  • Are they not getting enough vitamin C?
  • Is my house not clean enough?
  • Am I not instilling enough “clean” habits?
  • Am I FAILING as a mom because I can’t keep my kids healthy???  What are other people thinking in secret about what our house must be like if my kids are sick all the time…

We took December off from school so we could relax and embrace the reason for the season.  I also hoped to play lots of educational games and do some supplement work to our curriculum.  And here it was, week 2 of our 4-week hiatus, and we were stuck being sick.  And not all at once.  So when Noah was sick, I was busy cleaning and looking after him (and the baby) and then when he got better, Abby got sick, then Emmalyn.  And now I have a terrible cough/cold!  So there’s always been a reason we couldn’t get something done.  How is it possible that I’m “behind” in my “break schedule?”  That has to be some kind of oxymoron.  So among this week of weirdness and sickness, these were some of the failing thoughts that I let grab a hold of me…

  • Why can’t I keep my kids healthy?  I’m a bad mom.
  • We’re not having the “educational fun” and “embracing the season” like I envisioned for December.  I’m a bad homeschool mom.
  • Even though we’re not officially doing school this month, I still can’t find the time to balance the checkbook or budget and have caused my husband stress over this.  I’m a bad wife.
  • Even though we’re not officially doing school this month, I’m not putting in as much time as I’d like at work to get done what I want.  I’m bad at time management.
  • I found a recipe for a immune booster smoothie that I decided to serve my family each morning to help ward off future sickness, but it was not well-received.  (Too pulpy.) And I only served it a few mornings.  I’m a bad mom.
  • I didn’t get my Christmas shopping done when I wanted to.  I thought I would be “ahead of the game” and I’m not.  I’m bad at getting things done.
  • I can’t manage to get up early enough to do my quiet time AND exercise like I’d like to.  I’m bad at taking care of myself.

These are the thoughts that swirled around my head and heart all week, nearly crippling me.  I know that they’re not true.  Sure, I can improve on all these things because I’m not perfect, but I’m also not bad at all of them, or a failure.  I know this.  But when you’re weak (like, because you’re tackling sickness during the holiday season and feeling stressed) the Enemy creeps in.  And I let him.  I let him allow me to focus on my shortcomings and to feel like a failure.  And in doing so, it took my focus off of Christ. And when Christ is not at the center of my universe, it sort of spins out of control, you know?  His grace is sufficient for me, and His power is made strong in my weakness.  This truth was forgotten this past week.  I hope to never let it be forgotten again.

I will say, that as melancholy as this post has been, I’m doing much better at the start of this week. (At least mentally; physically, I kinda feel like crap still.)  And at the end of last week, I had a nice text-pet-talk with my good friend (and mom hero), Amanda.  I know we can all be in this same boat at times, ladies.  Let me encourage you that you’re not alone if you’ve felt these things, and please take hold of 2 Corinthians 12:9 and claim it for yourself!  You’re not a failure, you’re a child of God and have the glorious privilege of resting in Him.

Looking for an immune-boosting smoothie recipe?  I think I got this one down, as this morning, the kids said it was the “best smoothie ever!”  This smoothie is jam-packed with vitamin C and can be a good “pick-me-up” if you start to experience the “winter blues.”  I don’t really measure, so bear with me.  For my 3 kids I used…

  • handful of whole strawberries (stems included)*img_1022
  • 1 banana**
  • handful of chopped pineapple
  • 1/2 – 1 cup orange juice
  • 1 cup almond milk
  • 1 TB almond butter**
  • 1-2 TB wheat germ**

Blend until smooth.  Serve cold! 🙂

*Strawberry stems are edible and very healthy, containing extra vitamin C and minerals, which is why I leave them on for a smoothie.  Faster prep since I don’t have to cut up the strawberries, and the kids don’t even notice!

**Not included in the original “vitamin C” smoothies I was looking into, but they made the smoothie taste better for the my kids and the wheat germ helps to fill them up a bit more.

I serve this smoothie WITH FOOD for their breakfast.  Growing kids need a good breakfast! Randy and I could just have the smoothie as our meal and be fine! (Although, I pack him a different “protein” smoothie for lunch, so if I want to serve him this for breakfast, I usually make some other food as well.  Don’t want him to feel like he’s on a liquid diet. haha!)  For Randy and I, I add frozen, chopped kale; but my kids pick up on that right away so I leave it out of theirs.  Originally, I tried putting shredded carrots in the smoothies, too, but that’s what made it too pulpy since (although the carrots were already shredded) they didn’t break down enough.  I like the benefits carrots have to offer and I want to get vegetables in the smoothie, too, so I might try carrot juice in the future.  

 

Final Fruits: Gentleness & Self-Control

I’ve had so much on my heart and mind this week.  I feel like I have at least 5 topics to write about but everything in me (well, the organizes, control-freak in me) says I NEED to finish writing about the fruit of the Spirit, first!  So here we go!

We finished the fruit of the Spirit with gentleness and self-control.  And now Abby can recite the verses which is awesome! (See link at the end of this post.)

Gentleness is an interesting topic to try to discuss with children.  Because we have a baby in the house, they know exactly what it means to be gentle with their bodies.  They can demonstrate a gentle touch versus a rough one, no problem!  But applying that to their hearts can be a tricky concept for young minds.  I’ve said it before, kids only understand what they understand–it’s futile to try to get them to comprehend something that’s above their mental maturity level.  That’s why I love the verse we used for gentleness–it’s perfect for Abby, my little girly girl.  1 Peter 3:3-4 says: “Your beauty should not come from outward adornment, such as elaborate hairstyles and the wearing of gold jewelry or fine clothes. Rather, it should be that of your inner self, the unfading beauty of a gentle and quiet spirit, which is of great worth in God’s sight.”  Abby loves all things jewelry and make-up.  I explained to her that while those things are fine, they shouldn’t be the only thing that make us “beautiful” and that God wants us to have a gentle and quiet spirit (something I struggle with, myself).  This means not getting angry easily, not outbursting over little things.  This is so hard to do!  And we can’t be this way all the time on our own, that’s why we need the Holy Spirit in our lives.  So to help us remember to not outburst when we’re angry, we made stress balls in the shapes of grapes, our representational fruit! (Okay, you have to use your imagination a little.)

They came out pretty cute and the kids enjoyed them for about 5 minutes.  Then Noah bit his and got a mouthful of flour which was unpleasant (but yay for natural consequences) and Abby’s has disappeared. But planting seeds, I’m just planting seeds.  I’m sure in our homeschooling adventures we’ll revisit the fruit of the Spirit and I hope they remember some of these activities which will help the meaning of the verse stick. 🙂

So, self-control.  This is probably the biggest reason I even wanted to do a unit on the fruit of the Spirit!  Like most 5 year old girls, we struggle with controlling our emotions around here.  And like most 3 year old boys, we also struggle with controlling our bodies (especially when we’re angry).  And unfortunately, this fruit sort of fell flat.  Maybe I should’ve started with it since it was one I wanted to emphasize the most, but I think because we saved it until the end, we were just a little “over” the unit.  The verse we used was 2 Timothy 1:7: “God didn’t give us a spirit that makes us weak and fearful. He gave us a spirit that gives us power and love. It helps us control ourselves.”  I love this verse because it culminates our unit, in a way.  It talks about the Spirit of God helping us to control ourselves, just like it gives us all the other attributes we learned about throughout the unit!  We talked about some of the actions we need to control about ourselves and I also thought it was a good opportunity to talk about impulse control and “wanting” so many toys/things and being envious of others.  I meant to watch the Veggie Tales movie “Madame Blueberry” and talk about how she had to learn to control her spending, but we never did.  Strawberry was our fruit for self-control and I made strawberry smoothies to go with dinner that night!  To wrap up our unit, I started making some homemade play dough which is scented like different fruits.  I’ve only made 2 so far, but we have all winter!  They’re super easy, fun, and smell great!

Here’s the recipe…

In a saucepan over medium heat, mix:

  • 1 cup flour
  • 1 cup warm water
  • 2 TB salt
  • 2 TB cream of tartar
  • 2 TB vegetable oil
  • 3 oz pack of Jell-O

Once the mixture comes together, dump it out of the saucepan and knead with extra flour until it forms workable “play” dough!  So easy!  (A little messy, but fun!)

I’m glad we did this unit.  I do hope the activities will be remembered and referenced as Randy and I continue to educate our children.  Now, I think it’s time to focus on just our schoolwork without adding “extra” supplements for a little while.  It’s fun, but it’s a lot of work!  Maybe these posts gave you some ideas of things to do with your own children to help impress God’s Word on their hearts… 🙂

Embracing the Eternal Season in the Midst of the Temporary One

Things have been a bit crazy around the Dattolo household for the past few weeks.  I am tired.  And Randy is tired.  Our kids are even tired, as they’ve been falling asleep almost immediately upon hitting their pillows each night (normally they’re up in their room until between 8:00-9:00).  And I’ve been putting them to bed EARLY!!!  I can’t honestly think of anything specific that we’ve done lately that would tire them out so much, other than that maybe playing outside in the cold might make one more tired than playing outside in comfortable weather?  Or perhaps the sheer tiredness of both their parents has actually worn off on them.  I think we parents affect our kids in more ways than we can ever really understand. Anyway, I’m so tired that even the 2 cups of fully caffeinated coffee I had this afternoon (brewed “richly” by my new Ninja Coffee Bar!–I promise, I’ll write some kind of “ode” to it at a later date–it’s amazing) cannot help keep me awake.  Just glancing at the piles of clean laundry waiting for me to fold is making me yawn.

Randy got a new job recently and it’s stressful on both of us.  He’s now delivering packages for UPS.  Randy and I are wired so differently when it comes to career stuff.  And because it’s hard for me to understand the sudden switch, it makes it hard for me to explain it to others.  So I won’t try just yet.  I will say that I’m very proud of him, supportive, and happy for his happiness–there’s an excitement in his face when he says that this is the first job he’s had that he pictures himself retiring from.  (Wow, when did we get so old??? haha!)  Obviously, retirement is not in our near future, so it IS saying something that he feels like he could have this job from now until retirement, and it’s the first time he’s felt this way.  Because it’s the holiday season, this means several LATE nights for us right now, and early mornings.  For the past few weeks, his average arrival time at night has been around 8:00-8:30 p.m.  Then he has to eat the supper I’ve saved for him, and rush off to his second job, which he has to keep for now.  We’re like ships passing in the night.  Except I’m not passing.  I’m standing still and he’s coming and going.  So maybe that was a poor analogy. But you know what I mean.  This sudden change in our schedules has made us both tired and struggling to figure out how our day-to-days should work.  He’s obviously out working hard, and I’m figuring out how to keep the kids entertained from breakfast through bedtime and debating whether or not I should go “all out” for supper and what we can talk  about over dinner when it’s just been them and me all day long.  It’s exhausting, to say the least.

Randy and I now relish the weekends even more than we did before.  Saturday and Sunday hit and we both feel like we need to absorb as much of each other as we possibly can to last through the long week ahead.  I guess this makes the fact that I’m a very organized planner come in handy.  I actually schedule all of our family time on the weekends–when we’ll do a certain devotional, make cookies, take a walk, have a movie night, etc.  I have to plan it out or else we just sit around feeling exhausted and bored and before we know it, it’s Monday again.  This past weekend felt particularly special because of this.  Last week was the first week Randy had EXTREMELY late nights (like, after 9:30 at night–this has become the “norm” half the time, now) so the weekend together felt so needed!  I mentioned in a previous post what my plans were for December schooling.  We’re doing a devotional from my church which has some family connections (that I happened to write–did I mention that part?) and we’re also doing an abbreviated version of Truth in the Tinsel by Amanda White.  (I really love her!)  The kids and I do the Truth in the Tinsel during the week in place of school, basically.  It’s great, though, because start-to-finish, it takes about 20 minutes of the day!  So it’s definitely a nice break from our normal couple hours of school.

15267848_10158177065380221_7654522769736880644_nSo the family devotional we did this past weekend from Hope Chapel was about Jesus’ name: Immanuel.  We read about it and talked about its meaning.  Then we were supposed to have some family “togetherness” to symbolize being with each other the way God is with us.  We called my mother in law, who lives in Connecticut, just because.  I made Ree Drummond’s amazing broccoli cheddar soup and let it simmer on the stove while we took a family walk in the cold.  And it flurried a little for us!  When we got home, the soup was ready and we had a nice, long, lunch together as a family.  Then we ALL took a nap!  It was the best day.  Not to mention that Randy and I went out that night which was a lot of fun. 🙂

img_0969Yes, this is a stressful time, which is why it’s so important for me (us) to cherish these quaint, family moments.  Whenever I’m tempted to talk about this time of life being a “season” of this or that, I’m reminded of something I recently learned in a Bible study… the author was cautioning us not to think of life in terms of different seasons because the truth is, Christians are in an eternal season of life.  And this life on earth, knowing Christ, is its own season that should impact every temporary “season” of life we will ever experience.  So even though I’m tempted to dwell on the stress of this time and give myself the excuse that it’s just temporary, or seasonal, it’s no excuse to lay down.  I can rest, as long as I rest in Him.  But I can never stop living the life that God has given me or ministering to others (ahem, my husband, children, family, and friends) with the tools which He’s equipped me.  So I’ll continue to plan our family events so we can capitalize our time together.  I’ll continue to wait up for my husband and sit with him while he eats dinner at 9:30 at night and take care of the household chores so he has one less thing to worry about.  And I’ll continue to entertain, care for, and witness to my children.  And I’ll continue making broccoli soup, which we all decided is our new favorite (actually, it was always one of Randy’s favorites, which is why I made it). 💜 So that, my friends, is what’s up with me.  I was going to write about how we talked about our next fruit of the Spirit, recently–gentleness, but I’ll save that for my next post.  How’s your December going?

Faithfulness and December

On the day before Thanksgiving, I’m trying to cram in one more blogpost.  It’s going to be hard, since there are a million homeschool/holiday/parenting things on my mind right now!  Where do I begin?

Let’s start with our next fruit of the Spirit: faithfulness.  For faithfulness, we used a lemon.  I didn’t schedule any official school this week so we were able to focus on faithfulness and our Thanksgiving preparations (kind of–we also had doctor’s appointments and Monday was completely consumed by OCC drop-off.  We delivered 1660 boxes!!!).  I found “faithfulness” to be a kind of tricky concept to teach the kids.  I started with the story of Noah.  We read it and I talked about how Noah was faithful to God in that he stuck with building the ark even though it took him a long time, and he obeyed every command God gave him.  Then, God was faithful to Noah by doing what He said He was going to do. We listed some things that are faithful in our lives; things we can count on, like Daddy coming home from work every night (therefore he is faithful to us) and Mommy making breakfast, lunch, and dinner (therefore I am faithful by providing meals). We talked about how God wants us to be faithful to Him by obeying Him, and to others by doing what we say we’re going to do.  That night I made my chicken piccata, which is a lemony dish and the kids helped!

The verse I used as our key verse is Psalm 51:10.  It talks about having a faithful spirit and a pure heart, so at first I wanted to do a heart project, but we already did one with “love.”  So I decided to incorporate the “lemon” part of our theme and make paper lemonade glasses.  On each lemon in the glass, we wrote an example of how we can be faithful to God and others.  We made sponge-paint ice cubes, then glued straws to the glasses.

img_0776Today was definitely “cute craft” day because we also made these adorable turkey cookies for Thanksgiving, tomorrow!  Don’t you just want to gobble one up?! 😉

So I’ve been thinking about what our December will look like this year.  It’s a pretty common thing for homeschooling families to take the whole month of December off from school (and usually not take a February or April vacation) in order to make time for all the baking, events, craft projects, and Christmas units.  It’s one of the many benefits to homeschooling–to actually get to enjoy the Christmas season at a slower pace than usual!    This year I had a small part in putting together our church’s advent devotional readings.  The theme is 25 Names of Jesus and I wrote 5 of them and included a family connection and activity for families with children.  So, obviously we’ll be doing that, and I’m looking forward to it!  That’s only 5 family devotionals/activities, however, so I was feeling a little guilty (because I’m a mom, so of course) about taking a whole month off from school and not doing something a little more in-depth for Christmas.  Then I contemplated doing The Truth in the Tinsel from ohamanda.com but that seemed a little too in-depth.  So I think we might do an abbreviated version of it, which includes a piece on the different names of Jesus, so it will tie in nicely with the series we’re doing with church.  I have to admit that although I like the December plan, I don’t love it.  😉  But it’s the plan for now and I’ll keep you posted!  If you want to do the 25 Names of Jesus this advent season with us, you can find the readings (for free) here: http://www.hopechapelsterling.org/advent-readings-2016/  (Advent starts Sunday, November 27 and you don’t have to have kids to do it, the 25 main devotions are for adults!)  If you’re interested in doing the Truth in the Tinsel, you can find it on ohamanda.com.  You do have to pay for the ebook.  Have a wonderful Thanksgiving and if you’re in the same homeschool boat as me, have a wonderfully relaxing December and let me know what your plan is!  (I might want to steal it!) 😉

Fruit of the Spirit: Goodness

Our fruit this past week was goodness and we used a lime for representation.  Don’t ask me why.

It seems pretty obvious, I’m sure, but I just had to use the parable of the Good Samaritan for our Bible story.  I had to explain to the kids that Jesus was saying that EVERYONE is our neighbor and we are to love and “be good/do good deeds” for our neighbors, i.e. everyone.  They didn’t quite get the geography or culture of it all in context, but they definitely understood that the Samaritan was the one who did the right thing and the other two men did the wrong thing by passing by and not helping the wounded man.

My kids love seltzer water.  So during lunch, we drank seltzer and I had them try it plain first.  Then I said, “You know what will make this seltzer really GOOD?  Let’s squeeze a lime into it!”  So cheesy, I know.  But the craft we were supposed to do was a sun-catcher which would go with our verse for the week and a lime slice could make a cute little sun-catcher which is maybe why the two correlate.  I knew we wouldn’t get a chance to do the craft, so I had to just make it work.  (Emmalyn tried some lime, too.  You can see how that went over…)

Our verse for the week was Matthew 5:16 “In the same way, let your light shine in front of others.  Then they will see the good things you do.  And they will praise your Father who is in Heaven.”  (See how the sun-catcher craft would’ve been perfect?  Oh well, you can’t do everything.) 😉  When I introduced this verse, I asked the kids what the Good Samaritan did as his “good deeds.”  Then we made a list of what good things we can do for others, which led to a conversation about the difference between “good” things and “kind” things.  My kids seem to think that coloring a picture for someone cures all and is really the only thing they need to do for anyone. After some gentle prompting, our list grew and went in the right direction. 😉  Oh yeah, here’s some proof that I do actually teach my kids… (I’m not one to be in front of the camera much!)

Speaking of good deeds, did you pack an Operation Christmas Child (OCC) shoebox this year???  We were able to pack two: one by Abby and one by Noah.  We included letters and pictures in them and are hoping we might get to hear back from the child who receives the boxes, but who knows.  Either way, it was a fun process!  I was able to be a volunteer with Samaritan’s Purse this year as a relay center coordinator which was fun and a lot of work!  We’ve been counting boxes, packing boxes, and praying hard over the boxes!  If you’ve never heard of OCC or Samaritan’s Purse, check out their program! www.samaritanspurse.org/occ

img_0738I wanted to share one more GOOD thing with you!  We had another Saturday brunch this weekend (it’s seriously one of our favorite things to do with friends) and I made sheet-pan sausage that was amazing!  I got the recipe from my Food Network magazine and you can find it here.  It’s really not labor-intensive, though it might look it by first glance.  And the sage that’s in it made the house smell just like Thanksgiving!  I’ll definitely be making it again sometime soon! 🙂  It also makes several portions–hello, leftovers! 🙂
